The 1 Pan Simple Meal

     One of the most annoying things about being a parent is that everything revolves around food. I’m constantly being asked about the next meal, snack or school lunch and I’m over it. It’s been all I’ve thought about for the last 10+ years and my brain needs a mental dump of feeling the responsibility and extra weight on my shoulders. I go back and forth on a roller coaster of meal prepping for the week, quick and easy dinners in between soccer schedules and putting everything in one pot and making a masterpiece. The kids enjoy making Taco Tuesdays, pasta or indoor cookout nights with burgers and hot dogs which is always helpful as they know their way around the kitchen, but with food allergies and exceptions, we never get lunch days off where they can order from school. We do our best to make extra dinner and the kids have been putting their lunches together for the next day which allows me to take a burden off. I just need some quick, easy and healthy!

     One of the biggest lifesavers I’ve had is the one pan meal. We put a ton of different veggies on a tray with a touch of olive oil and seasoning and bake it till it’s ready. We can do 2-4 trays at a time. It allows us to buy veggies in bulk with no waste. The variety of seasonings honestly change the meal…we personally love garlic, Italian seasoning, Cajun spice, salt & pepper and mixed herbs.

     My favorites are buying in bulk from the farmers market or local Produce Junction. We typically have everything from potatoes, broccoli, asparagus, carrots, brussel sprouts, onions, cauliflower and we LOOOOVE veggies! In the summer grilling is my favorite way to cook too! How delicious does last nights meal look?
