Anniversary Pho

A few years ago, my husband and I went to Lancaster, Pennsylvania to celebrate our anniversary. We had an absolute blast walking around, relaxing and trying new restaurants without kids in tow. When it comes to food, we definitely aren’t strangers to try new things. We came across a Vietnamese restaurant for the first time and instantly fell in love. We had a big bowl of vegan pho! This soup was the most flavorful and delicious thing we had ever tasted. Our vegetarian pho had carrots, broccoli, snow peas, edamame, cabbage, Bean sprouts, tofu, jalapenos and rice noodles. The moment we came home, I went out and got all the crazy seasonings and ingredients to make the perfect broth and our kids quickly fell in love with it too.

Honestly, the soup takes a little while to make. There are some ingredients like ginger, and star anise that I don’t have on hand unless I’m making this particular soup. The kids love soup, ramen and really anything out of a bowl. For the holiday season we purchased everyone a deep dish ramen bowl which has come in handy for our pho nights.

I’ve been searching online to try and find an easier way to make the soup especially as we enter soccer season and time is of the essence. I think I found it. When I go to the supermarket, I love to get the family style mixed vegetable bag that has cauliflower, broccoli and snow peas. Add in a few chopped carrots and some bean sprouts and we’ve got a decent meal. When searching online, I found a soup bag that I can drop in and it makes the broth for me. It saved so much time, energy and money hunting down everything near me and the kids loved it.

I’m a sucker for easy, healthy and delicious meals that don’t break the budget and this is definitely one of those. I popped everything into the instant pot the most recent time and simply had to add the crispy tofu from the air fryer on the noodles from the stove top. If you haven’t tried pho yet, don’t walk, RUN!
