Weeknight dinners for overwhelmed moms

Soccer season is in full swing over here and for any of you sport mamas being chauffeurs from one practice or game to the next, I see you! By the time the kids get home from school, it’s a quick snack and change before leaving for practice. Some days we’re home by 7:30 while other days it’s not until almost 8pm. Monday through Thursday our dinner tends to be around 8:30 or 9pm and it’s kind of hard to change it up. We love our family dinners, so now it’s just much later.

With all the craziness of the weekday, it is hard to prep for the super quick and easy meals we’ll need. I would absolutely love to meal prep on the weekends, but if I’m being completely honest…we’re not there right now. Spring season is survival mode. The kids are busy, we’re busy and everything is nuts. With less than a month to go until the end of school and soccer, we’re just going with it. All I’m going for is quick, cheap, vegan and filling.

Tofu scramble

One of our quickest go-to’s that we do almost every week. Easiest thing is to chop up a whole bunch of potatoes, mixed with a bit of olive oil, add your favorite seasonings, and pop in the air fryer for 15 to 20 minutes. In a large skillet crumble extra firm tofu, taco seasoning and beans. I always recommend black beans or chickpeas.

Pizza Night

We’ve tried this a few ways but love having some type of pie crust available in the pantry. We do always have the long ones or round ones on hand as it only takes about 15 minutes. We always have sauce and cheese handy. We experiment by adding sauteed garlic cloves, broccoli, chickpeas, olives, jalapenos…literally anything will be delicious. It’s a fan favorite here for us. When we have time we’ll get dough as well to create a personal pizza.

Burgers/Hot Dogs

Our easiest, quickest meal may very well be a grill night. We always have Dr. Preagers veggie burgers, black bean burgers and/or beyond burgers in the freezer along with our vegan hot dogs/sausage. It takes less then 10 minutes to get it ready with easy toppings like lettuce, tomatoes, onion, and sauerkraut you can’t go wrong. I even bought these cute little baskets to use to make it more like Red Robins. Add some fries in the air fryer and you’re the best mom ever.
