Meals don’t have to be Complicated

Healthy snacks and meals don’t have to be complicated or expensive! Lately we’ve been finding a lot of simple, amazing food options that the kids love and some that’s way cheaper than the standard, local grocery store. Here’s a little weekend special from our family to yours!

One of our all time favorites is a middle eastern dish called tabbouleh. They always have it in little packs and are so fresh and full of flavor. It’s a combo of bulger, herbs, tomatoes and onions. It’s delicious on a salad, sandwich or a dipping snack. I saw it at Aldi’s and had to get it knowing this weekend was the perfect opportunity for a healthy veg option.

Tabbouleh Tuna Ciabatta Sandwich

I always mix a can of tuna with spicy mustard and everything but the bagel seasoning. Super easy and has a ton of flavor. I added that to the bread with a sprinkle of Tabbouleh on top and a final touch of lettuce. Filling, delicious and healthy!

Tabbouleh Matzah

My stomach has been bothering me lately and I’ve been trying to counteract the bloat I’ve been feeling. Adding in some easy gluten free options to snack on that take the snack game to the next level. This was super simple. Gluten free Matzah with a thin layer of hummus, and a sprinkle of my favorite salad on top. Not only is it colorful and healthy, but gives you that crunch that honestly helps me with those chip cravings.

Veggie Stir fry

This one is an easy one with either fresh and frozen veggies. Our favorites are onion, assorted peppers, broccoli, and cubes tofu. Another option is the frozen asian stir fry bags with snow peas. We add in a little garlic and soy sauce or add some premade teriyaki sauce. While it’s all steaming/cooking don’t forget the basmati rice and a side of red chili sauce to taste.

My kids are pretty easy when it comes to lunch and dinner, and we always make meals that they can easily recreate themselves. They love to cook, bake and create in the kitchen so having them feel comfortable to throw ingredients together is pretty awesome! I always recommend having a few staples whether that be rice, noodles, toast, buns, veggies and use different sauces and seasonings to change up the flavor. Makes everything quick, easy and cost effective.
