Allergy Friendly Super Simple 10 minute Dinner

As we finish up with basketball and head into our soccer season, we’re constantly looking for quick and easy recipes to take the burden off. Being 25 to 30 minutes away from the playing field definitely cuts into our dinner and prep time. We leave by 4:30 most days and don’t get back until 7:30. Quick, easy, filling and healthy recipes are always on the menu and finding things that the kids love is always a plus.

Our family by far loves Mexican food. Anything involving burritos, nachos, tacos, or rice/beans are an instant “ Best dinner ever!” since the kids were little, I would always make these open bean sandwiches. Now of course it doesn’t sound as appealing as it actually is and I have no good name for it so maybe you can help me.

Ingredients:

-Pack of hoagie rolls

-Two cans of black beans/ refried black beans

-Shredded cheese

-Salsa of choice

-Tomatoes, avocado and jalapeno- optional

When cooking with a regular can of black beans, we always heat it in a saute pan and I use a potato masher to smush them down. It tends to take about 5 minutes of prep time and if you use a can of refried black beans, you just add a little water and mix. Since we follow a vegan diet, we do a lot more beans than most people with black beans being one of my favorites. They are high in protein and fiber, taste delicious and can be used in an infinite number of recipes. We always have cans and dried beans stocked in the pantry just in case.

I always preheat my oven to about 375°. I open the hoagie rolls on a cookie sheet with some foil and spread my bean mixture on top. Add a little cheese and pop in the oven for about 5 to 10 minutes. It should come out slightly crispy with the cheese melted. I then top it with a healthy amount of salsa and sprinkle my tomatoes, avocados and hot peppers. The kids absolutely love this meal and it is one of our favorites. It doesn’t take much time and the ingredients are simple enough to make it a weekly special.
